What we grow
Shiitake (Lentinula edodes) and lion’s mane (Hericium erinaceus) are in production all year at our farm in Amsterdam-Noord, with grey oyster mushroom (Pleurotus ostreatus) grown to order. Beyond those, the catalogue runs to 24 species — from other oyster mushrooms to turkey tail and reishi. Every species below links to its full description, in Dutch.

Lentinula edodes
Meaty cap, edible whole. The stem is firmer and can be trimmed off separately for stock or broth.

Lion's mane · pom pom blanc
Hericium erinaceus
Soft, fibrous structure that you pull apart by hand. Bite and flavour sit close to crab and lobster.

Grijze oesterzwam
Pleurotus ostreatus
Grows in clusters of 5 to 15 cm and is edible whole. Meaty structure that holds up in a stew, ragout or risotto.

Lentinula edodes
Soak in lukewarm water; ready to use after about an hour. 100 grams dried rehydrates to roughly 900-1000 grams.

Whole and cut pieces mixed. Soak in lukewarm water, then pan-fry or work into a stock.

Fruiting body only, dried and milled in Amsterdam-Noord. Mild, nutty flavour for sauces, doughs and drinks.
